  • 1 bunch of asparagus trimmed
  • 1 cup cherry tomatoes mixed colors preferred
  • 1 ball of burrata cheese
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • Salt and freshly cracked black pepper to taste
  • Fresh basil leaves for garnish
  • Optional: A drizzle of balsamic glaze

Instructions
 

1️⃣ Prep the Vegetables:

  • Preheat the oven to 400°F (200°C). Arrange the trimmed asparagus and cherry tomatoes on a baking sheet.

2️⃣ Season and Roast:

  • Drizzle with olive oil, sprinkle with minced garlic, salt, and black pepper. Toss to coat. Roast for 12–15 minutes until the asparagus is tender and the tomatoes are slightly blistered.

3️⃣ Assemble the Salad:

  • Transfer the roasted asparagus and tomatoes to a serving plate.

4️⃣ Add the Burrata:

  • Place the burrata cheese in the center of the plate. Gently tear it open to reveal its creamy interior.

5️⃣ Finishing Touches:

  • Drizzle with a bit more olive oil (and balsamic glaze if desired). Garnish with fresh basil leaves and an extra sprinkle of black pepper.
