Description

A vibrant holiday salad with mixed greens, apple, avocado, pomegranate, and honey mustard dressing.


Ingredients

  • 6 cups mixed greens (arugula, spinach, or spring mix)
  • 1 large apple, thinly sliced (Honeycrisp or Fuji)
  • 1 avocado, sliced
  • 1/2 cup pomegranate seeds
  • 1/3 cup crumbled blue cheese or goat cheese
  • 1/2 cup candied pecans or walnuts
  • Optional: thinly sliced red onions or roasted butternut squash
  • For the dressing: 1/4 cup olive oil, 1 1/2 tbsp apple cider vinegar, 1 tbsp Dijon mustard, 1 tbsp honey, salt & pepper to taste

Instructions

  1. Shake olive oil, vinegar, mustard, honey, salt, and pepper in a jar until emulsified.
  2. Wash and dry greens, slice apple and avocado, and gather toppings.
  3. Layer greens, apple, avocado, pomegranate seeds, nuts, and cheese in a bowl.
  4. Drizzle dressing and toss gently before serving.
  5. Serve with holiday meals.
