  • 2 ripe peaches, sliced
  • 1 cup cherry tomatoes, halved
  • 12 burrata balls
  • ½ cup fresh cherries, pitted and halved (optional)
  • ¼ cup toasted pumpkin seeds or pine nuts
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze or honey
  • A handful of fresh basil leaves
  • Fresh dill or thyme (optional, for garnish)
  • Salt and freshly ground black pepper, to taste
  • Crispy grilled bread (for serving)

Instructions

Step by Step:

1️⃣ Assemble the Base:

  • Arrange the peach slices and cherry tomatoes on a serving plate.
  • Add the fresh cherries for extra sweetness, if desired.

2️⃣ Add the Burrata:

  • Place the burrata balls on top.
  • Gently tear them open to reveal the creamy inside.

3️⃣ Garnish with Herbs & Seeds:

  • Scatter fresh basil leaves and dill or thyme on the salad.
  • Sprinkle with toasted pumpkin seeds or pine nuts for crunch.

4️⃣ Drizzle & Season:

  • Drizzle with olive oil and balsamic glaze (or honey for a sweeter version).
  • Season with salt and freshly ground black pepper.

5️⃣ Serve with Bread:

  • Enjoy immediately with crispy grilled bread to scoop up the burrata and juices.
