- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 2 cups fresh spinach or kale
- 1/2 tbsp butter
- 2 sausages, sliced
- 2 large eggs
- 1/2 avocado, sliced
Instructions
Step by Step:
1️⃣ Roast the Sweet Potatoes:
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with 1 tbsp olive oil, salt, pepper, and smoked paprika.
- Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
2️⃣ Sauté the Greens:
- Heat 1/2 tbsp olive oil in a pan over medium heat.
- Add spinach or kale and cook until wilted (about 3-4 minutes). Set aside.
3️⃣ Cook the Sausages:
- In the same pan, add sliced sausage and cook until browned on both sides (5-7 minutes). Set aside.
4️⃣ Scramble the Eggs:
- Whisk eggs with a pinch of salt and pepper.
- Melt butter in a pan over low heat, add eggs, and stir gently until soft and creamy.
5️⃣ Assemble the Bowl:
- In a bowl, arrange roasted sweet potatoes, sautéed greens, sausage, scrambled eggs, and avocado slices.
- Sprinkle extra black pepper on top and enjoy!
