🔹 For the Meatballs:

  • ½ lb ground turkey (or chicken)
  • ¼ cup breadcrumbs
  • 1 egg
  • 1 tbsp fresh parsley, chopped
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano
  • 1 tbsp olive oil (for cooking)

🔹 For the Roasted Sweet Potatoes:

  • 1 cup sweet potatoes, cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dried thyme

🔹 For the Salad:

  • 2 cups arugula or mixed greens
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 1 tbsp fresh parsley, chopped

🔹 For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp honey
  • Salt & black pepper to taste

Instructions

Step by Step:

1️⃣ Roast the Sweet Potatoes:

  • Preheat oven to 400°F (200°C).
  • Toss sweet potato cubes with olive oil, salt, black pepper, and thyme.
  • Spread on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.

2️⃣ Make the Meatballs:

  • In a bowl, mix ground turkey, breadcrumbs, egg, parsley, garlic powder, onion powder, salt, black pepper, and oregano.
  • Form into small meatballs.
  • Heat olive oil in a pan over medium heat and cook meatballs for 8-10 minutes, turning occasionally, until browned and fully cooked.

3️⃣ Prepare the Salad:

  • In a large bowl, toss arugula with red onion, feta cheese, and roasted sweet potatoes.

4️⃣ Make the Dressing:

  • Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper.

5️⃣ Assemble & Serve:

  • Add the cooked meatballs to the salad.
  • Drizzle with dressing and garnish with fresh parsley.
  • Enjoy this nutrient-rich, flavorful meal!

Notes

Cooking Note:
For extra crunch, add toasted walnuts or pumpkin seeds to the salad. Prefer a different cheese? Swap feta for goat cheese or Parmesan!
