 For the Fried Eggs:

  • 2 large eggs
  • 1 tbsp olive oil or butter
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp chili flakes (optional)

 For the Avocado & Tomato Salad:

  • ½ ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ small red onion, thinly sliced
  • 45 fresh basil leaves, chopped
  • ½ tbsp olive oil
  • ½ tsp lemon juice
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

Step by Step:

1️⃣ Fry the Eggs:

  • Heat olive oil or butter in a pan over medium heat.
  • Crack the eggs into the pan and cook until the whites are set and the yolks are slightly runny (or to your preference).
  • Sprinkle with salt, black pepper, and chili flakes.

2️⃣ Prepare the Avocado & Tomato Salad:

  • In a bowl, combine cherry tomatoes, avocado slices, and red onion.
  • Drizzle with olive oil and lemon juice.
  • Add salt, black pepper, and chopped basil, then toss gently.

3️⃣ Assemble & Serve:

  • Plate the fried eggs next to the avocado & tomato salad.
  • Garnish with extra chili flakes for an extra kick!
