- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries (plus more for topping)
- 2 tbsp honey or maple syrup
- 1 tbsp balsamic vinegar
- Fresh rosemary sprigs
- Extra dried cranberries and chopped walnuts
Instructions
- Prepare the Filling: In a bowl, mix sautéed spinach, cream cheese, mozzarella, cranberries, and walnuts.
- Stuff the Chicken: Cut a pocket in each chicken breast. Season with salt, pepper, garlic powder, and thyme. Fill each with the cheesy spinach mixture.
