- 2 slices of multigrain bread
- 1 tbsp olive oil
- 2 eggs
- 1 cup fresh spinach
- Salt & black pepper to taste
- 2 tbsp grated cheese (optional)
Instructions
Step by Step:
1️⃣ Toast the Bread:
Toast the multigrain bread until golden and crispy.
2️⃣ Sauté the Spinach:
Heat half the olive oil in a pan over medium heat.
Add fresh spinach, sauté for 2 minutes until wilted, then season with salt.
3️⃣ Fry the Eggs:
In the same pan, add the remaining olive oil.
Crack in the eggs and cook until the whites are set but the yolks are still runny.
4️⃣ Assemble the Toast:
Place sautéed spinach on each toast.
Top with a fried egg and season with salt and black pepper.
5️⃣ Add Final Touches:
Sprinkle with grated cheese (if using) and a drizzle of olive oil.
