- 1 cup fresh spinach, chopped
- ½ cup crumbled feta cheese
- ¼ cup milk
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven to 350°F and lightly grease a muffin tin.
- In a bowl, whisk together the eggs and milk until well combined.
- Stir in the chopped spinach, feta cheese, salt, and black pepper.
- Pour the mixture evenly into the prepared muffin cups.
- Bake for 18–22 minutes, or until the egg muffins are set and lightly golden on top.
- Remove from the oven and let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the microwave for 30 seconds before serving.
