- 2 cups sushi rice
- 3 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- 1 lb fresh salmon fillets, cut into chunks
- 2 tbsp soy sauce
- 1 tbsp sriracha
- 1/4 cup mayonnaise
- 1 tsp sesame oil
- 1 avocado, diced
- 2 green onions, sliced
- 1 tbsp furikake seasoning
- Optional: eel sauce or spicy mayo for drizzle
Instructions
- Cook sushi rice according to package instructions. Mix with rice vinegar, sugar, and salt.
- Toss salmon chunks with soy sauce, sesame oil, sriracha, and mayonnaise.
- Spread rice in a baking dish. Sprinkle furikake seasoning over the rice.
- Layer the seasoned salmon on top of the rice.
- Bake at 375°F for 20-25 minutes until salmon is cooked through.
- Top with diced avocado, sliced green onions, and drizzle with optional sauces.
Notes
- Use fresh salmon for best results.
- Adjust sriracha to your preferred spice level.
