For the Spicy Garlic Butter Chicken:

  • 1 large chicken breast, cut into cubes
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp dried oregano

For the Roasted Brussels Sprouts:

  • 1 cup Brussels sprouts, halved
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tbsp balsamic vinegar

For the Sautéed Potatoes & Peppers:

  • 1 medium potato, diced
  • 1/4 cup green bell pepper, sliced
  • 1/4 cup red bell pepper, sliced
  • 1/4 small onion, chopped
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt & black pepper

Instructions

Step by Step:

1️⃣ Marinate the Chicken:

  • In a bowl, mix chicken cubes with olive oil, paprika, chili powder, garlic powder, onion powder, oregano, salt, and pepper.

2️⃣ Cook the Chicken:

  • Heat butter in a pan over medium-high heat.
  • Add chicken and cook for 6-8 minutes until golden brown and cooked through.

3️⃣ Roast the Brussels Sprouts:

  • Preheat oven to 400°F (200°C).
  • Toss Brussels sprouts with olive oil, garlic powder, salt, and pepper.
  • Roast for 20-25 minutes, flipping halfway, then drizzle with balsamic vinegar.

4️⃣ Sauté the Potatoes & Peppers:

  • Heat olive oil in a pan over medium heat.
  • Add diced potatoes and cook for 10 minutes, stirring occasionally.
  • Add bell peppers, onions, paprika, salt, and pepper, then cook for another 5-7 minutes.

5️⃣ Assemble & Serve:

  • Plate the spicy garlic butter chicken, roasted Brussels sprouts, and sautéed potatoes together for a perfect meal.
