For the Roasted Brussels Sprouts:
- 1 cup Brussels sprouts, halved
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tbsp balsamic vinegar
For the Sautéed Potatoes & Peppers:
- 1 medium potato, diced
- 1/4 cup green bell pepper, sliced
- 1/4 cup red bell pepper, sliced
- 1/4 small onion, chopped
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp salt & black pepper
Instructions
Step by Step:
1️⃣ Marinate the Chicken:
- In a bowl, mix chicken cubes with olive oil, paprika, chili powder, garlic powder, onion powder, oregano, salt, and pepper.
2️⃣ Cook the Chicken:
- Heat butter in a pan over medium-high heat.
- Add chicken and cook for 6-8 minutes until golden brown and cooked through.
3️⃣ Roast the Brussels Sprouts:
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, garlic powder, salt, and pepper.
- Roast for 20-25 minutes, flipping halfway, then drizzle with balsamic vinegar.
4️⃣ Sauté the Potatoes & Peppers:
- Heat olive oil in a pan over medium heat.
- Add diced potatoes and cook for 10 minutes, stirring occasionally.
- Add bell peppers, onions, paprika, salt, and pepper, then cook for another 5-7 minutes.
5️⃣ Assemble & Serve:
- Plate the spicy garlic butter chicken, roasted Brussels sprouts, and sautéed potatoes together for a perfect meal.
