🔹 For the Chicken:

  • 1 boneless, skinless chicken breast, sliced
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ¼ tsp chili flakes (optional)

🔹 For the Roasted Carrots:

  • 1 large carrot, cut into sticks
  • 1 tsp olive oil
  • Salt & black pepper (to taste)

🔹 For the Rice Bowl:

  • ½ cup cooked white rice
  • 1 tbsp spicy mayo (mix 1 tbsp mayo with ½ tsp sriracha)
  • 1 tsp chopped green onions (for garnish)

Instructions

Step by Step:

1️⃣ Roast the Carrots:

  • Preheat oven to 400°F (200°C).
  • Toss carrot sticks with olive oil, salt, and black pepper.
  • Spread on a baking sheet and bake for 20-25 minutes until tender.

2️⃣ Cook the Chicken:

  • Heat olive oil in a pan over medium heat.
  • Season the sliced chicken with garlic powder, smoked paprika, salt, and chili flakes.
  • Cook for 5-7 minutes, flipping occasionally, until golden brown and fully cooked.

3️⃣ Prepare the Rice:

  • Cook rice according to package instructions.
  • Fluff with a fork and set aside.

4️⃣ Assemble the Bowl:

  • Place the cooked rice in a bowl.
  • Top with sliced spicy chicken and roasted carrots.
  • Drizzle with spicy mayo and sprinkle with chopped green onions.

5️⃣ Serve & Enjoy!

  • Mix everything together and enjoy this flavorful, satisfying meal!

Notes

Cooking Tip:
For extra crispiness, broil the carrots for the last 2 minutes. Want more heat? Add an extra dash of sriracha to the spicy mayo!
