- 1 tsp chopped green onions (for garnish)

Step by Step:
1️⃣ Roast the Carrots:
- Preheat oven to 400°F (200°C).
- Toss carrot sticks with olive oil, salt, and black pepper.
- Spread on a baking sheet and bake for 20-25 minutes until tender.
2️⃣ Cook the Chicken:
- Heat olive oil in a pan over medium heat.
- Season the sliced chicken with garlic powder, smoked paprika, salt, and chili flakes.
- Cook for 5-7 minutes, flipping occasionally, until golden brown and fully cooked.
3️⃣ Prepare the Rice:
- Cook rice according to package instructions.
- Fluff with a fork and set aside.
4️⃣ Assemble the Bowl:
- Place the cooked rice in a bowl.
- Top with sliced spicy chicken and roasted carrots.
- Drizzle with spicy mayo and sprinkle with chopped green onions.
