- 2 slices of sourdough or whole-grain bread
- 1 ripe avocado
- 2 eggs
- 1 tbsp olive oil
- 1/4 cup pickled jalapeños
- 1 tbsp sun-dried tomatoes, chopped
- 1/2 cup shredded cabbage or lettuce (optional)
- 1 tsp za’atar seasoning (or dried oregano)
- 1 tbsp hot sauce (like Sriracha or Cholula)
- Salt & black pepper, to taste
- Cherry tomatoes (for garnish)
Instructions
Step by Step:
1️⃣ Toast the Bread:
- Toast the bread slices until golden and crispy.
2️⃣ Prepare the Avocado Base:
- Mash the avocado with a pinch of salt and black pepper.
- Spread it evenly over the toasted bread.
3️⃣ Fry the Eggs:
- Heat olive oil in a pan and cook the eggs to your desired doneness.
- Season with salt and black pepper.
4️⃣ Assemble the Toast:
- Layer shredded cabbage (if using) on top of the avocado.
- Place the fried eggs on each toast slice.
- Top with sun-dried tomatoes, pickled jalapeños, and za’atar seasoning.
5️⃣ Drizzle & Serve:
- Finish with a drizzle of hot sauce.
- Garnish with cherry tomatoes on the side and enjoy!
