Spicy Avocado Toast with Egg & Jalapeños

Ingredients:

  • 2 slices of sourdough or whole-grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tbsp olive oil
  • 1/4 cup pickled jalapeños
  • 1 tbsp sun-dried tomatoes, chopped
  • 1/2 cup shredded cabbage or lettuce (optional)
  • 1 tsp za’atar seasoning (or dried oregano)
  • 1 tbsp hot sauce (like Sriracha or Cholula)
  • Salt & black pepper, to taste
  • Cherry tomatoes (for garnish)

Instructions

Step by Step:

1️⃣ Toast the Bread:

  • Toast the bread slices until golden and crispy.

2️⃣ Prepare the Avocado Base:

  • Mash the avocado with a pinch of salt and black pepper.
  • Spread it evenly over the toasted bread.

3️⃣ Fry the Eggs:

  • Heat olive oil in a pan and cook the eggs to your desired doneness.
  • Season with salt and black pepper.

4️⃣ Assemble the Toast:

  • Layer shredded cabbage (if using) on top of the avocado.
  • Place the fried eggs on each toast slice.
  • Top with sun-dried tomatoes, pickled jalapeños, and za’atar seasoning.

5️⃣ Drizzle & Serve:

  • Finish with a drizzle of hot sauce.
  • Garnish with cherry tomatoes on the side and enjoy!
