A simple and flavorful slow cooker meal featuring ranch-seasoned chicken with potatoes and green beans.

- 2 pounds boneless, skinless chicken thighs or chicken breasts
- 1 pound baby Yukon gold potatoes, halved
- 12 ounces fresh green beans, trimmed
- 1 packet ranch seasoning mix
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter, sliced
- 1/2 cup chicken broth
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Spray the slow cooker lightly with nonstick cooking spray.
- Add the chicken to the center of the slow cooker.
- Place the halved potatoes on one side and the green beans on the other side.
- Sprinkle the ranch seasoning mix, garlic powder, onion powder, and black pepper evenly over everything.
- Pour the chicken broth around the edges.
- Top with slices of butter.
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and fully cooked and the potatoes are soft.
- Gently shred or chunk the chicken if desired.
- Spoon the chicken, potatoes, and green beans onto plates and garnish with chopped parsley before serving.
Notes
- For crispier potatoes, broil them for 2-3 minutes after slow cooking.
- Adjust cooking time based on your slow cooker model.
