  • 1 tbsp butter or olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp shredded cheese (optional)

 For the Sautéed Vegetables:

  • ½ cup broccoli florets
  • ¼ cup mushrooms, sliced
  • ¼ cup sweet potatoes, diced
  • ½ small jalapeño, sliced (optional for spice)
  • 1 tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder

 For the Avocado:

  • ½ ripe avocado, sliced
  • ½ tsp lemon juice
  • Pinch of salt

Instructions

Step by Step:

1️⃣ Sauté the Vegetables:

  • Heat olive oil in a pan over medium heat.
  • Add sweet potatoes and cook for 5 minutes until slightly tender.
  • Add mushrooms, broccoli, and jalapeño, then season with salt, pepper, and garlic powder.
  • Sauté for another 5 minutes until everything is golden and tender.

2️⃣ Scramble the Eggs:

  • In a bowl, whisk the eggs with salt and black pepper.
  • Heat butter in a pan over low heat.
  • Pour in the eggs and stir gently until soft and creamy.
  • Sprinkle with shredded cheese if using, then remove from heat.

3️⃣ Prepare the Avocado:

  • Slice the avocado and drizzle with lemon juice and a pinch of salt.

4️⃣ Assemble & Serve:

  • Plate the scrambled eggs with sautéed vegetables and sliced avocado.
