Ingredients

- 1 1/2 cups all-purpose flour
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 1/4 cups milk
- 1 large egg
- 3 tbsp melted butter
- 2 tbsp maple syrup
- 1 lb breakfast sausage
- 6 large eggs
- 2 tbsp milk or half-and-half
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups shredded cheddar cheese
- Chopped chives (optional)
- Maple syrup for drizzling
Instructions
- Cook the sausage in a skillet over medium heat until browned. Drain excess grease and set aside.
- Whisk eggs with milk, salt, and pepper. Scramble in a nonstick skillet until just set. Set aside.
- Whisk flour, sugar, baking powder, and salt in a bowl. In another bowl, whisk milk, egg, melted butter, and maple syrup. Combine wet and dry ingredients.
- Heat a nonstick skillet or griddle over medium-low. Spoon batter to make small pancakes. Cook until bubbles form and edges set.
- Add scrambled egg, sausage, and cheese to each pancake. Top with more batter or another pancake.
- Flip and cook until golden brown and centers are done.
- Sprinkle with chives and drizzle with maple syrup.
Notes
- Use a nonstick skillet for easy flipping.
- Don’t overcook the eggs—they’ll finish cooking in the bites.
- Store leftovers in the fridge for up to 3 days or freeze for later.
