Description

A quick and flavorful skillet dinner featuring smoked sausage, bell peppers, and onions served over rice.


Ingredients

  • 1 lb smoked sausage (or kielbasa), sliced into 1/2-inch coins
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 2 tbsp soy sauce (or Worcestershire sauce)
  • 1 tbsp brown sugar or honey (optional, for balance)
  • 1/3 cup chicken broth (or water)
  • 2 cups cooked white rice (for serving)
  • 2 tbsp sliced green onions (optional garnish)

Instructions

  1. Cook rice according to package directions and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and sear 3–4 minutes, stirring occasionally, until browned.
  3. Add onion and bell peppers. Cook 6–8 minutes, stirring, until softened and slightly charred on the edges.
  4. Stir in garlic, Italian seasoning, smoked paprika, salt, and black pepper. Cook 30 seconds until fragrant.
  5. Add soy sauce (or Worcestershire), broth, and brown sugar/honey (if using). Stir and simmer 2–3 minutes until the sauce lightly coats everything.
  6. Serve hot over rice and top with sliced green onions if desired.

Notes

  • Adjust salt to taste.
  • For extra heat, add red pepper flakes.
  • Use any color bell peppers you prefer.
