Ingredients:
- 2 cups baby potatoes, halved
- 1 cup broccoli florets
- 2 sausage links (chicken, turkey, or vegan), sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
Step by Step:
1️⃣ Preheat & Prep:
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, garlic powder, paprika, oregano, salt, and pepper.
2️⃣ Roast the Potatoes:
- Spread potatoes on a baking sheet and roast for 20 minutes.
3️⃣ Add Broccoli & Sausage:
- Toss broccoli and sliced sausage with 1 tbsp olive oil.
- Add to the baking sheet with the potatoes and roast for another 15-20 minutes, until crispy.
4️⃣ Garnish & Serve:
- Sprinkle with fresh parsley and serve warm.
