- 1 large sweet potato
- 8 ounces lean ground beef or ground turkey
- 1 teaspoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh spinach, chopped
- 1 green onion, sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F.
- Pierce the sweet potato with a fork and bake for 40 to 50 minutes, or until fork tender.
- While the sweet potato bakes, heat olive oil in a skillet over medium heat.
- Add the ground beef or ground turkey, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Cook until browned and fully cooked through.
- Stir in the chopped spinach and green onion, then cook for 1 to 2 minutes until the spinach wilts.
- Remove the sweet potato from the oven and let it cool slightly.
- Slice the sweet potato in half lengthwise and gently fluff the inside with a fork.
- Spoon the cooked meat mixture evenly over both halves.
- Top with mozzarella cheese and cheddar cheese.
- Return to the oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
- Serve hot.
