Description

A high-protein meal featuring baked sweet potatoes stuffed with seasoned ground meat and melted cheese.


Ingredients

  • 1 large sweet potato
  • 8 ounces lean ground beef or ground turkey
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh spinach, chopped
  • 1 green onion, sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Pierce the sweet potato with a fork and bake for 40 to 50 minutes, or until fork tender.
  3. While the sweet potato bakes, heat olive oil in a skillet over medium heat.
  4. Add the ground beef or ground turkey, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper. Cook until browned and fully cooked through.
  5. Stir in the chopped spinach and green onion, then cook for 1 to 2 minutes until the spinach wilts.
  6. Remove the sweet potato from the oven and let it cool slightly.
  7. Slice the sweet potato in half lengthwise and gently fluff the inside with a fork.
  8. Spoon the cooked meat mixture evenly over both halves.
  9. Top with mozzarella cheese and cheddar cheese.
  10. Return to the oven and bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  11. Serve hot.
