Ingredients

  • 4 boneless skinless chicken breasts
  • Salt & black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced or in pearls
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey (optional for balance)
  • 2 tablespoons chopped fresh basil (plus more for garnish)
  • 1 teaspoon Italian seasoning

Instructions

  1. Season chicken with garlic powder, salt, pepper, and Italian seasoning. Heat oil in a large oven-safe skillet over medium-high heat and sear chicken for 3–4 minutes per side.
  2. Scatter cherry tomatoes around the chicken in the skillet.
  3. In a small bowl, mix balsamic vinegar and honey. Pour over chicken and tomatoes.
  4. Add mozzarella slices or pearls on top of each chicken breast. Bake at 400°F (200°C) for 10–12 minutes, or until chicken is cooked through and cheese is melty.
  5. Sprinkle with fresh basil and serve hot.
