- 4 boneless skinless chicken breasts
- Salt & black pepper, to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced or in pearls
- ¼ cup balsamic vinegar
- 1 tablespoon honey (optional for balance)
- 2 tablespoons chopped fresh basil (plus more for garnish)
- 1 teaspoon Italian seasoning
Instructions
- Season chicken with garlic powder, salt, pepper, and Italian seasoning. Heat oil in a large oven-safe skillet over medium-high heat and sear chicken for 3–4 minutes per side.
- Scatter cherry tomatoes around the chicken in the skillet.
- In a small bowl, mix balsamic vinegar and honey. Pour over chicken and tomatoes.
- Add mozzarella slices or pearls on top of each chicken breast. Bake at 400°F (200°C) for 10–12 minutes, or until chicken is cooked through and cheese is melty.
- Sprinkle with fresh basil and serve hot.
