Description

A creamy and cheesy stuffed chicken dish with mushrooms and garlic butter, perfect for a comforting dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups mushrooms, sliced (cremini or button)
  • 3 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup shredded mozzarella or provolone cheese
  • 1/4 cup grated parmesan
  • 2 tbsp chopped parsley (for garnish)
  • Toothpicks to secure

Instructions

  1. In a skillet, melt 1 tbsp butter and sauté garlic and mushrooms with a pinch of salt until golden and tender.
  2. Cut a deep pocket into each chicken breast and stuff with the mushroom mix and mozzarella.
  3. Heat olive oil in a skillet and sear the stuffed chicken on both sides until golden—about 4–5 minutes.
  4. Transfer to a baking dish, top with parmesan, and bake at 375°F for 15–18 minutes or until cooked through.
  5. Melt remaining butter with a pinch of garlic and Italian seasoning, then drizzle over the finished chicken. Garnish with parsley.
