For the Mushroom Toast:

  • 1 slice whole grain or sourdough bread
  • 1 cup mushrooms, sliced (cremini or button)
  • 1 tbsp butter or olive oil
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp fresh parsley, chopped (for garnish)

For the Fried Eggs:

  • 2 large eggs
  • 1/2 tbsp butter or olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Avocado:

  • 1/2 ripe avocado, sliced
  • 1/4 tsp lemon juice
  • 1/4 tsp red pepper flakes (optional)

Instructions

Step by Step:

1️⃣ Sauté the Mushrooms:

  • Heat butter or olive oil in a pan over medium heat.
  • Add sliced mushrooms and cook for 5-7 minutes until golden brown.
  • Stir in minced garlic, salt, black pepper, and red pepper flakes.
  • Cook for 1 more minute, then remove from heat.

2️⃣ Toast the Bread:

  • While the mushrooms are cooking, toast the bread until golden brown.
  • Spread the sautéed mushrooms evenly over the toast.

3️⃣ Fry the Eggs:

  • Heat butter or olive oil in a non-stick pan over medium heat.
  • Crack the eggs into the pan and cook until the whites are set but yolks are still runny (about 3-4 minutes).
  • Season with salt and black pepper.

4️⃣ Prepare the Avocado:

  • Slice the avocado and drizzle with lemon juice.
  • Sprinkle with red pepper flakes for extra flavor.

5️⃣ Assemble & Serve:

  • Plate the mushroom toast alongside the fried eggs and avocado.
  • Garnish with fresh parsley and enjoy!

Notes

Cooking Note:
For extra crunch, rub a garlic clove over the toasted bread before adding the mushrooms!
