- 2 large eggs
- 1/2 tbsp butter or olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
For the Avocado:
- 1/2 ripe avocado, sliced
- 1/4 tsp lemon juice
- 1/4 tsp red pepper flakes (optional)

Step by Step:
1️⃣ Sauté the Mushrooms:
- Heat butter or olive oil in a pan over medium heat.
- Add sliced mushrooms and cook for 5-7 minutes until golden brown.
- Stir in minced garlic, salt, black pepper, and red pepper flakes.
- Cook for 1 more minute, then remove from heat.
2️⃣ Toast the Bread:
- While the mushrooms are cooking, toast the bread until golden brown.
- Spread the sautéed mushrooms evenly over the toast.
3️⃣ Fry the Eggs:
- Heat butter or olive oil in a non-stick pan over medium heat.
- Crack the eggs into the pan and cook until the whites are set but yolks are still runny (about 3-4 minutes).
- Season with salt and black pepper.
4️⃣ Prepare the Avocado:
- Slice the avocado and drizzle with lemon juice.
- Sprinkle with red pepper flakes for extra flavor.
5️⃣ Assemble & Serve:
- Plate the mushroom toast alongside the fried eggs and avocado.
- Garnish with fresh parsley and enjoy!

For extra crunch, rub a garlic clove over the toasted bread before adding the mushrooms!
