- 1 cup cooked red quinoa
- 1 cup cherry tomatoes, halved (red & yellow)
- 1 small cucumber, sliced
- 1/4 small red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup feta cheese, cubed
- 2 tbsp fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
- Salt & black pepper to taste
Instructions
Step by Step:
1️⃣ Cook the Quinoa:
- Rinse quinoa under cold water, then cook according to package instructions. Let it cool.
2️⃣ Prepare the Vegetables:
- Slice the cherry tomatoes, cucumber, red onion, and olives.
3️⃣ Mix the Ingredients:
- In a large bowl, combine the cooked quinoa, vegetables, olives, and feta cheese.
4️⃣ Make the Dressing:
- Whisk together olive oil, lemon juice, oregano, salt, and pepper.
5️⃣ Combine & Serve:
- Drizzle the dressing over the salad, toss well, and garnish with fresh parsley. Serve immediately or chill before serving.
