  • 1 cup cooked red quinoa
  • 1 cup cherry tomatoes, halved (red & yellow)
  • 1 small cucumber, sliced
  • 1/4 small red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, cubed
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp dried oregano
  • Salt & black pepper to taste

Instructions

Step by Step:

1️⃣ Cook the Quinoa:

  • Rinse quinoa under cold water, then cook according to package instructions. Let it cool.

2️⃣ Prepare the Vegetables:

  • Slice the cherry tomatoes, cucumber, red onion, and olives.

3️⃣ Mix the Ingredients:

  • In a large bowl, combine the cooked quinoa, vegetables, olives, and feta cheese.

4️⃣ Make the Dressing:

  • Whisk together olive oil, lemon juice, oregano, salt, and pepper.

5️⃣ Combine & Serve:

  • Drizzle the dressing over the salad, toss well, and garnish with fresh parsley. Serve immediately or chill before serving.
