Delicious Mediterranean Ground Beef Stir Fry

Ingredients:

  • 1 lb ground beef
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • ½ red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • ¼ cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped

Instructions

Step by Step:

1️⃣ Cook the Beef:

  • Heat 1 tbsp olive oil in a large skillet over medium heat.
  • Add ground beef, breaking it apart, and cook until browned.
  • Drain excess fat if needed.

2️⃣ Sauté the Veggies:

  • Add another tbsp of olive oil.
  • Toss in red onion, bell pepper, and zucchini.
  • Sauté for 5 minutes until slightly tender.

3️⃣ Season & Stir:

  • Add garlic, oregano, paprika, cumin, salt, and black pepper.
  • Stir well to coat everything in the spices.

4️⃣ Add Tomatoes & Finish:

  • Stir in cherry tomatoes and cook for 2 more minutes until slightly softened.

5️⃣ Garnish & Serve:

  • Remove from heat, sprinkle with crumbled feta and fresh parsley, and serve hot!

Notes

Cooking Note:
For extra flavor, try adding a splash of lemon juice or a drizzle of balsamic glaze before serving! This dish pairs well with rice, quinoa, or warm pita bread.
