- 1 lb ground beef
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- ½ red onion, chopped
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- ¼ cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
Instructions
Step by Step:
1️⃣ Cook the Beef:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add ground beef, breaking it apart, and cook until browned.
- Drain excess fat if needed.
2️⃣ Sauté the Veggies:
- Add another tbsp of olive oil.
- Toss in red onion, bell pepper, and zucchini.
- Sauté for 5 minutes until slightly tender.
3️⃣ Season & Stir:
- Add garlic, oregano, paprika, cumin, salt, and black pepper.
- Stir well to coat everything in the spices.
4️⃣ Add Tomatoes & Finish:
- Stir in cherry tomatoes and cook for 2 more minutes until slightly softened.
5️⃣ Garnish & Serve:
- Remove from heat, sprinkle with crumbled feta and fresh parsley, and serve hot!

Cooking Note:
For extra flavor, try adding a splash of lemon juice or a drizzle of balsamic glaze before serving! This dish pairs well with rice, quinoa, or warm pita bread.
