Refreshing Mediterranean Cucumber & Feta Salad

  • 2 cucumbers, thinly sliced
  • ½ red onion, thinly sliced
  • 1 avocado, diced
  • ½ cup Kalamata olives, halved
  • ½ cup crumbled feta cheese
  • ¼ cup fresh dill, chopped
  • Zest of 1 lemon

For the Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

Step by Step:

1️⃣ Prepare the Ingredients:

  • Slice the cucumbers and red onion thinly.
  • Dice the avocado and halve the olives.
  • Chop the fresh dill and zest the lemon.

2️⃣ Make the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.

3️⃣ Assemble the Salad:

  • In a large bowl, combine cucumbers, red onion, avocado, olives, and feta.
  • Sprinkle with dill and lemon zest.

4️⃣ Toss & Serve:

  • Drizzle with the dressing and gently toss everything together.
  • Serve immediately and enjoy this fresh Mediterranean delight!

Notes

For extra crunch, add toasted pine nuts or sunflower seeds. Want more protein? Toss in grilled chicken or chickpeas!
