Description

Cozy Italian Wedding Soup with Orzo & Meatballs is a hearty, soul-warming dish perfect for chilly nights or a quick family meal.


Ingredients

  • 1 lb ground beef or pork (or combo)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated parmesan cheese
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1/2 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 8 cups chicken broth
  • 3/4 cup orzo pasta
  • 3 cups fresh spinach
  • Optional: extra parmesan for serving

Instructions

  1. Mix & Shape the Meatballs: Combine all meatball ingredients in a bowl, then roll into mini meatballs.
  2. Sear the Meatballs (Optional): In a pot, lightly brown meatballs in olive oil to seal in flavor.
  3. Sauté the Aromatics: In the same pot, cook onions, garlic, and carrots until fragrant and softened.
  4. Simmer the Soup: Add chicken broth and bring to a simmer. Gently drop in the meatballs, and cook for 10–12 minutes. Add orzo and cook for another 8–10 minutes until tender.
  5. Add Spinach & Serve: Stir in spinach until wilted (about 2 minutes). Season to taste, then ladle into bowls with extra parmesan if desired.
