Description
A delicious and easy honey BBQ chicken dinner with creamy garlic parmesan potatoes, perfect for weeknight meals or meal prep.

- 4 boneless chicken breasts
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- ½ cup honey
- ½ cup BBQ sauce
- ¼ cup panko breadcrumbs (optional)
- Fresh parsley for garnish
- 1½ lbs baby gold potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
- 2 tbsp grated parmesan cheese
- 1 tbsp fresh chopped parsley
- 2 tbsp sour cream or plain Greek yogurt (optional)
Instructions
- Preheat oven to 400°F. Rub chicken with olive oil, garlic powder, paprika, salt, and pepper. Bake for 20 minutes.
- Mix honey and BBQ sauce. Brush over chicken. Sprinkle panko on top. Bake another 10–15 minutes.
- Boil baby potatoes until tender (15–20 mins). Drain, toss with olive oil, garlic powder, salt, pepper, and parmesan. Smash slightly.
- Bake potatoes at 425°F for 15–20 minutes until golden. Drizzle with sour cream or yogurt and sprinkle with parsley.
- Serve chicken with potatoes. Garnish with fresh parsley.
Notes
- Panko breadcrumbs add extra crunch but are optional.
- Greek yogurt can be used instead of sour cream.
- Great for meal prep—stores well in the fridge for 3-4 days.
