Description
A hearty and comforting hobo casserole with ground beef, potatoes, and creamy cheese sauce.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 4 cups peeled and cubed potatoes
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt & black pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Sauté the ground beef and onion in a skillet until fully cooked.
- Peel and cube the potatoes while the beef cooks.
- Whisk together cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
- Layer half the potatoes, beef mixture, and half the soup mixture in a greased casserole dish. Repeat layers and top with cheese.
- Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake another 15 minutes until bubbly.
Notes
- Smaller potato cubes cook faster.
- Garnish with fresh parsley for extra flavor.
