Description

A hearty and comforting hobo casserole with ground beef, potatoes, and creamy cheese sauce.


Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cups peeled and cubed potatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & black pepper to taste
  • Fresh parsley (optional for garnish)

Instructions

  1. Sauté the ground beef and onion in a skillet until fully cooked.
  2. Peel and cube the potatoes while the beef cooks.
  3. Whisk together cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper.
  4. Layer half the potatoes, beef mixture, and half the soup mixture in a greased casserole dish. Repeat layers and top with cheese.
  5. Cover with foil and bake at 375°F (190°C) for 45 minutes. Remove foil and bake another 15 minutes until bubbly.

Notes

  • Smaller potato cubes cook faster.
  • Garnish with fresh parsley for extra flavor.
