🔹 For the Herb-Grilled Chicken:
- 1 boneless, skinless chicken breast
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
🔹 For the Roasted Sweet Potatoes:
- 1 small sweet potato, diced
- 1/2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
- Salt & black pepper, to taste
🔹 For the Ratatouille (Sautéed Vegetables):
- 1/2 zucchini, sliced
- 1/2 eggplant, diced
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1/4 onion, diced
- 1 clove garlic, minced
- 1/2 tbsp olive oil
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- Salt & black pepper, to taste
Instructions
Step by Step:
1️⃣ Marinate & Cook the Chicken:
- Rub chicken with olive oil, garlic powder, oregano, thyme, salt, and black pepper.
- Heat a pan or grill over medium-high heat and cook for 5-6 minutes per side until golden and cooked through.
2️⃣ Roast the Sweet Potatoes:
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, parsley, salt, and black pepper.
- Spread on a baking sheet and roast for 25-30 minutes until crispy and tender.
3️⃣ Sauté the Ratatouille Vegetables:
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté for 1-2 minutes until fragrant.
- Add zucchini, eggplant, bell peppers, basil, thyme, salt, and black pepper.
- Cook for 7-10 minutes, stirring occasionally, until vegetables are tender.
4️⃣ Assemble & Serve:
- Plate the grilled chicken with roasted sweet potatoes and ratatouille. Enjoy!
