Ingredients:

🔹 For the Herb-Grilled Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

🔹 For the Roasted Sweet Potatoes:

  • 1 small sweet potato, diced
  • 1/2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • Salt & black pepper, to taste

🔹 For the Ratatouille (Sautéed Vegetables):

  • 1/2 zucchini, sliced
  • 1/2 eggplant, diced
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/4 onion, diced
  • 1 clove garlic, minced
  • 1/2 tbsp olive oil
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • Salt & black pepper, to taste

Instructions

Step by Step:

1️⃣ Marinate & Cook the Chicken:

  • Rub chicken with olive oil, garlic powder, oregano, thyme, salt, and black pepper.
  • Heat a pan or grill over medium-high heat and cook for 5-6 minutes per side until golden and cooked through.

2️⃣ Roast the Sweet Potatoes:

  • Preheat oven to 400°F (200°C).
  • Toss diced sweet potatoes with olive oil, smoked paprika, garlic powder, parsley, salt, and black pepper.
  • Spread on a baking sheet and roast for 25-30 minutes until crispy and tender.

3️⃣ Sauté the Ratatouille Vegetables:

  • Heat olive oil in a pan over medium heat.
  • Add onion and garlic, sauté for 1-2 minutes until fragrant.
  • Add zucchini, eggplant, bell peppers, basil, thyme, salt, and black pepper.
  • Cook for 7-10 minutes, stirring occasionally, until vegetables are tender.

4️⃣ Assemble & Serve:

  • Plate the grilled chicken with roasted sweet potatoes and ratatouille. Enjoy!
