Description

Herb Chicken & Mash Combo is a hearty, comforting dish featuring juicy herb-seasoned chicken, creamy mashed potatoes, and sweet-savory sautéed vegetables.


Ingredients

Scale

2 boneless chicken breasts

1 tsp garlic powder

1 tsp onion powder

1 tsp dried parsley

Salt & pepper to taste

2 tbsp olive oil

4 medium potatoes, peeled and cubed

2 tbsp butter

1/4 cup milk (or heavy cream)

1/2 cup shredded cheese (optional)

1/2 lb baby carrots

1/2 green bell pepper, sliced

1/2 red bell pepper, sliced

1/2 small onion, sliced

1 tbsp soy sauce

1 tbsp brown sugar

1 tsp paprika

1 tsp Italian seasoning

1 tbsp olive oil (for sauté)


Instructions

1. Rub garlic powder, onion powder, parsley, salt, and pepper onto chicken breasts.

2. Heat olive oil and sear chicken for 5–6 minutes per side until cooked through.

3. Boil potatoes until fork-tender; mash with butter, milk, and cheese if using.

4. Sauté onions, carrots, and peppers in olive oil. Add soy sauce, sugar, paprika, Italian seasoning.

5. Assemble plate with mash, chicken, and veggies. Serve hot.

Notes

Let the chicken rest 5 minutes before slicing to keep it juicy.

Use heavy cream for richer mashed potatoes.

Don’t overcrowd your veggie sauté to ensure even caramelization.
