  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon olive oil

For Garnish:

  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon feta cheese, crumbled

Instructions

Step by Step:

1️⃣ Cook the Sausages:

  • Heat olive oil in a pan over medium heat.
  • Cook sausages for 8-10 minutes, turning occasionally until browned and cooked through.

2️⃣ Roast the Potatoes:

  • Toss cubed potatoes and bell peppers with olive oil, salt, pepper, and garlic powder.
  • Roast at 400°F (200°C) for 20-25 minutes until golden and crispy.

3️⃣ Make the Scrambled Eggs:

  • Heat butter in a pan over low heat.
  • Whisk eggs, salt, and pepper, then pour into the pan.
  • Stir gently until soft curds form. Remove from heat while still slightly runny.

4️⃣ Assemble the Plate:

  • Serve scrambled eggs, roasted potatoes, and sausages on a plate.
  • Sprinkle with crumbled feta cheese and fresh parsley.

Notes

Cooking Note:
For extra fluffy scrambled eggs, cook them on low heat and stir slowly. Removing them from the heat while slightly runny ensures a creamy texture!
