Ingredients
1 lb ground turkey
2 large sweet potatoes, peeled and diced
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp dried thyme
Salt and pepper to taste
1 cup shredded mozzarella or cheddar cheese
Fresh parsley or cilantro, chopped (optional garnish)
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
2. Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft.
3. Add ground turkey and cook until browned, about 5–6 minutes.
4. Stir in garlic, bell pepper, sweet potatoes, paprika, cumin, thyme, salt, and pepper. Cook for 3–5 minutes until fragrant.
5. Transfer to baking dish, cover with foil, and bake for 25 minutes or until sweet potatoes are fork-tender.
6. Uncover, top with shredded cheese, and bake for 10–15 minutes until bubbly and golden.
7. Garnish with fresh parsley or cilantro and serve hot.
Notes
Make it dairy-free by skipping the cheese or using plant-based alternatives.
Use ground chicken or beef if desired.
Freeze before baking cheese layer, then reheat and finish in oven for fresh flavor.
