Description

Easy weeknight cheeseburger tacos with crispy tortillas and a tangy special sauce drizzle.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (optional, for toasting tortillas)
  • 1 tbsp taco seasoning (or 1 tsp chili powder + 1/2 tsp cumin + 1/2 tsp garlic powder)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 4 small flour tortillas (street-taco size)
  • 4 slices American cheese (or cheddar slices)
  • 1 cup shredded iceberg lettuce
  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish (or finely chopped pickles)
  • 1/2 tsp garlic powder
  • Pinch of paprika (optional)
  • Crushed red pepper flakes (optional, for topping)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned and crumbly. Drain excess grease if needed.
  2. Stir in taco seasoning, salt, and pepper. Add 2–3 tbsp water and simmer 1–2 minutes until the beef is saucy.
  3. Mix the special sauce: stir mayo, ketchup, mustard, relish, garlic powder, and paprika until smooth.
  4. Lightly toast tortillas in a dry skillet (or with a tiny bit of oil) 30–60 seconds per side until warm and lightly crisped.
  5. Spread seasoned beef over each tortilla.
  6. Place a slice of American cheese on top while the beef is hot so it gets melty.
  7. Top with shredded lettuce, then drizzle generously with special sauce.
  8. Finish with a pinch of crushed red pepper flakes if you like a little heat. Serve immediately.

Notes

  • For crispier tortillas, brush lightly with oil before toasting.
  • Adjust spice level by adding more or less taco seasoning.
  • Store leftovers in an airtight container for up to 2 days.
