Ingredients

  • 1/2 cup water
  • 1 cup refried beans (or black beans, warmed and lightly mashed)
  • 1 cup enchilada sauce (or salsa roja)
  • 2 cups shredded mozzarella or Monterey Jack cheese
  • 4 large flour tortillas (burrito-size)
  • 1 tbsp oil or butter (for toasting)
  • Optional: chopped cilantro, lime wedges, salsa, sour cream

Instructions

  1. Cook the beef: In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
  2. Season: Add taco seasoning and water. Simmer 2–3 minutes until thick and saucy.
  3. Warm fillings: Warm refried beans and enchilada sauce (microwave or stovetop) so they spread easily.
  4. Assemble burritos: Lay out tortillas. Spread beans down the center, add seasoned beef, drizzle enchilada sauce, and top with plenty of cheese.
  5. Roll: Fold in the sides, then roll tightly into burritos.
  6. Toast: Heat oil/butter in a skillet over medium heat. Toast burritos seam-side down 2–3 minutes per side until golden and the cheese melts.
  7. Serve: Slice in half and top with cilantro. Serve with lime, salsa, or sour cream.
