Ingredients
Ground beef – 1 lb
Cooked white rice – 2 cups
Onion – 1 small (chopped)
Bell pepper – 1 (diced, any color)
Garlic – 2 cloves (minced)
Diced tomatoes – 1 can (14.5 oz, drained)
Shredded cheddar cheese – 1 cup
Olive oil – 1 tbsp
Chili powder – 1 tsp
Cumin – ½ tsp
Salt & pepper – to taste
Fresh parsley or cilantro – for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add chopped onion and bell pepper. Sauté for 3-4 minutes until softened.
3. Add garlic and cook for another 30 seconds until fragrant.
4. Add ground beef and cook until browned, breaking it apart with a spatula.
5. Drain excess grease if necessary.
6. Stir in diced tomatoes, chili powder, cumin, salt, and pepper.
7. Add cooked rice and mix everything together.
8. Top with shredded cheddar cheese. Cover and cook on low until the cheese melts.
9. Garnish with chopped parsley or cilantro.
10. Serve hot and enjoy!

Add black beans or corn for more texture and nutrition.
