4 pork or chicken sausages
1 tbsp olive oil
1 cup spinach
1/2 cup green peas
1/2 cup shredded Brussels sprouts
1/4 cup mushrooms, sliced
1 tbsp butter
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

2 large sweet potatoes, peeled & chopped
1 tbsp butter
1/4 cup milk (or dairy-free alternative)
1/2 tsp cinnamon (optional)
1/2 tsp salt
Instructions
Step by Step:

Boil sweet potatoes for 15 minutes until fork-tender. Drain, then mash with butter, milk, salt, and cinnamon until smooth.

Heat olive oil in a pan over medium heat. Grill the sausages for 10-12 minutes, turning occasionally, until browned and cooked through.

In the same pan, add butter, garlic powder, Brussels sprouts, mushrooms, spinach, and peas. Sauté for 5 minutes until softened. Season with salt and pepper.

Spread the sweet potato mash on a plate, place the grilled sausages on top, and add the sautéed greens on the side.

Top with an extra dollop of butter for extra richness. Serve hot and enjoy
