Grilled Halloumi with Scrambled Eggs & Sautéed Veggies

For the Scrambled Eggs:

  • 2 eggs
  • 1 tbsp butter
  • Salt & black pepper to taste
  • ½ tsp smoked paprika (optional)

For the Grilled Halloumi:

  • 4 slices halloumi cheese

For the Sautéed Veggies:

  • ½ cup cherry tomatoes, halved
  • ½ cup mushrooms, sliced
  • 1 tsp olive oil
  • Salt & black pepper to taste

Instructions

Step by Step:

1️⃣ Grill the Halloumi:

  • Heat a dry pan over medium heat.
  • Cook halloumi slices for 1-2 minutes per side until golden brown.

2️⃣ Sauté the Veggies:

  • In the same pan, heat olive oil over medium heat.
  • Add mushrooms and cook for 3 minutes.
  • Add cherry tomatoes, season with salt and pepper, and sauté for another 2 minutes.

3️⃣ Scramble the Eggs:

  • In a separate pan, melt butter over low heat.
  • Crack eggs into the pan and stir continuously until soft and fluffy.
  • Season with salt, black pepper, and smoked paprika.

4️⃣ Assemble & Serve:

  • Plate the scrambled eggs, grilled halloumi, and sautéed veggies.
  • Enjoy this delicious and nutritious breakfast!

Notes

Cooking Note:
For ultra-creamy scrambled eggs, cook them on low heat and stir gently to prevent overcooking. Halloumi doesn’t need extra oil—its natural fat helps it grill beautifully without sticking!
