1️⃣ Marinate & Grill the Chicken:
- Rub chicken breast with olive oil, garlic powder, smoked paprika, black pepper, salt, cumin, and chili powder.
- Heat a grill pan over medium-high heat.
- Cook for 5-6 minutes per side until fully cooked.
- Let it rest for 5 minutes, then slice into thick, even pieces.
2️⃣ Roast the Vegetables:
- Preheat oven to 400°F (200°C).
- Toss potatoes, broccoli, and bell peppers with olive oil, garlic powder, oregano, salt, and pepper.
- Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
3️⃣ Assemble the Bowl:
- Place roasted vegetables in a bowl.
- Arrange grilled chicken slices on top.
