🔹 For the Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp cumin
  • ¼ tsp chili powder (optional)

🔹 For the Roasted Vegetables:

  • ½ cup broccoli florets
  • ½ cup red bell pepper, sliced
  • ½ cup yellow potatoes, cubed
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Salt & pepper to taste

  • Fresh cilantro (optional)

Instructions

Step by Step:

1️⃣ Marinate & Grill the Chicken:

  • Rub chicken breast with olive oil, garlic powder, smoked paprika, black pepper, salt, cumin, and chili powder.
  • Heat a grill pan over medium-high heat.
  • Cook for 5-6 minutes per side until fully cooked.
  • Let it rest for 5 minutes, then slice into thick, even pieces.

2️⃣ Roast the Vegetables:

  • Preheat oven to 400°F (200°C).
  • Toss potatoes, broccoli, and bell peppers with olive oil, garlic powder, oregano, salt, and pepper.
  • Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.

3️⃣ Assemble the Bowl:

  • Place roasted vegetables in a bowl.
  • Arrange grilled chicken slices on top.

4️⃣ Garnish & Serve:

  • Sprinkle with fresh cilantro for extra flavor.
  • Enjoy this smoky, protein-rich meal!

Cooking Tip:
For a bolder taste, marinate the chicken for at least 30 minutes before grilling. Want extra crunch? Roast the potatoes for an additional 5 minutes!
