For the Tzatziki Sauce:
- ¼ cup Greek yogurt
- 1 tbsp cucumber, grated
- ½ tsp lemon juice
- ¼ tsp garlic powder
- ¼ tsp dried dill
- Salt & black pepper (to taste)
Instructions
Step by Step:
1️⃣ Cook the Chicken & Peppers:
- Heat a grill pan or skillet over medium heat.
- Rub chicken breast and chopped red bell pepper with olive oil, garlic powder, oregano, salt, and black pepper.
- Cook chicken for 5-6 minutes per side until fully cooked.
- Sauté or grill the red bell peppers until slightly charred.
2️⃣ Prepare the Mediterranean Salad:
- In a bowl, mix cherry tomatoes, cucumber, red onion, parsley, and feta.
- Drizzle with olive oil and lemon juice.
- Season with salt and black pepper.
3️⃣ Make the Tzatziki Sauce:
- In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, garlic powder, dried dill, salt, and black pepper.
4️⃣ Assemble the Bowl:
- Slice the grilled chicken and place it in a bowl.
- Add the Mediterranean salad and grilled red peppers.
- Top with a generous drizzle of tzatziki sauce.
