For the Chicken Kebab:
- 1 large chicken breast, cut into cubes
- 1 tbsp olive oil
- 1 tbsp Greek yogurt
- 1 tsp lemon juice
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp oregano
- Salt & black pepper to taste
- Wooden skewers (soaked in water)
For the Salad:
- 2 cups mixed greens (romaine, arugula, or spinach)
- 1/2 cup cherry tomatoes, halved
- 1/4 small cucumber, sliced
- 1/4 small red onion, thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup pomegranate seeds
- 1/4 cup feta cheese, cubed
- 1/2 small apple, sliced (optional)
For the Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar or lemon juice
- 1/2 tsp Dijon mustard
- 1/2 tsp dried oregano
- Salt & black pepper to taste
Instructions
Step by Step:
1️⃣ Marinate the Chicken:
- In a bowl, mix olive oil, yogurt, lemon juice, paprika, garlic powder, cumin, oregano, salt, and pepper.
- Add chicken cubes, coat well, and marinate for at least 30 minutes.
2️⃣ Grill the Chicken:
- Thread marinated chicken onto skewers.
- Grill over medium heat for 10-12 minutes, turning occasionally, until golden and fully cooked.
3️⃣ Prepare the Salad:
- In a large bowl, combine greens, tomatoes, cucumber, red onion, olives, pomegranate seeds, feta, and apple slices.
4️⃣ Make the Dressing:
- Whisk olive oil, balsamic vinegar, mustard, oregano, salt, and pepper.
5️⃣ Assemble & Serve:
- Drizzle dressing over the salad and toss well.
- Place the grilled chicken skewer on top and serve fresh.
