For the Chicken Kebab:

  • 1 large chicken breast, cut into cubes
  • 1 tbsp olive oil
  • 1 tbsp Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • Salt & black pepper to taste
  • Wooden skewers (soaked in water)

For the Salad:

  • 2 cups mixed greens (romaine, arugula, or spinach)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 small cucumber, sliced
  • 1/4 small red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup pomegranate seeds
  • 1/4 cup feta cheese, cubed
  • 1/2 small apple, sliced (optional)

For the Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt & black pepper to taste

Instructions

Step by Step:

1️⃣ Marinate the Chicken:

  • In a bowl, mix olive oil, yogurt, lemon juice, paprika, garlic powder, cumin, oregano, salt, and pepper.
  • Add chicken cubes, coat well, and marinate for at least 30 minutes.

2️⃣ Grill the Chicken:

  • Thread marinated chicken onto skewers.
  • Grill over medium heat for 10-12 minutes, turning occasionally, until golden and fully cooked.

3️⃣ Prepare the Salad:

  • In a large bowl, combine greens, tomatoes, cucumber, red onion, olives, pomegranate seeds, feta, and apple slices.

4️⃣ Make the Dressing:

  • Whisk olive oil, balsamic vinegar, mustard, oregano, salt, and pepper.

5️⃣ Assemble & Serve:

  • Drizzle dressing over the salad and toss well.
  • Place the grilled chicken skewer on top and serve fresh.
