Description

A healthy and protein-packed meal featuring grilled chicken and broccoli with a creamy garlic sauce, perfect for quick weeknight dinners or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 4 cups fresh broccoli florets
  • 1 tbsp water (for steaming)
  • For Creamy Garlic Sauce:
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt & cracked pepper to taste
  • 1 tbsp chopped parsley or chives (for garnish)

Instructions

  1. Rub chicken with olive oil, paprika, garlic powder, salt, and pepper. Grill on medium heat 5–6 minutes per side until cooked through.
  2. Add broccoli to a skillet with 1 tbsp water, cover, and steam for 3–4 minutes until tender-crisp.
  3. Whisk together Greek yogurt, mayo, mustard, lemon juice, garlic powder, salt, and pepper to make the sauce.
  4. Divide broccoli between bowls, top with grilled chicken, and drizzle with creamy garlic sauce.
  5. Sprinkle parsley or chives on top and serve warm.
