  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 4 cups romaine or mixed greens, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/2 cup corn (fresh or canned)
  • 1 avocado, sliced
  • 1/2 cup guacamole

For the Dressing:

  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh cilantro, chopped
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

Step by Step:

1️⃣ Grill the Chicken:

  • Rub chicken breasts with olive oil, salt, pepper, paprika, and garlic powder.
  • Heat a grill or pan over medium heat and cook chicken for 6-7 minutes per side until golden and cooked through.
  • Let rest for a few minutes, then slice into strips.

2️⃣ Prepare the Salad Base:

  • In a large bowl, arrange the chopped romaine or mixed greens.

3️⃣ Assemble the Toppings:

  • Add cherry tomatoes, cucumber slices, corn, avocado slices, and guacamole to the bowl.

4️⃣ Make the Dressing:

  • Blend or whisk together Greek yogurt (or mayo), olive oil, lemon juice, cilantro, garlic, salt, and pepper until smooth.

5️⃣ Drizzle & Serve:

  • Place sliced grilled chicken on top of the salad and drizzle with the creamy dressing.
