- 1 avocado, sliced
- 1/2 cup guacamole

- 1/2 cup Greek yogurt or mayonnaise
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh cilantro, chopped
- 1 garlic clove, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
Step by Step:
1️⃣ Grill the Chicken:
- Rub chicken breasts with olive oil, salt, pepper, paprika, and garlic powder.
- Heat a grill or pan over medium heat and cook chicken for 6-7 minutes per side until golden and cooked through.
- Let rest for a few minutes, then slice into strips.
2️⃣ Prepare the Salad Base:
- In a large bowl, arrange the chopped romaine or mixed greens.
3️⃣ Assemble the Toppings:
- Add cherry tomatoes, cucumber slices, corn, avocado slices, and guacamole to the bowl.
4️⃣ Make the Dressing:
- Blend or whisk together Greek yogurt (or mayo), olive oil, lemon juice, cilantro, garlic, salt, and pepper until smooth.
5️⃣ Drizzle & Serve:
- Place sliced grilled chicken on top of the salad and drizzle with the creamy dressing.
