For the Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp salt

For the Roasted Potatoes:
- 2 cups baby potatoes, halved
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt & black pepper, to taste
For the Greek Salad:
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/4 red onion, finely chopped
- 1/3 cup kalamata olives, halved
- 1/4 cup feta cheese, crumbled
- 1 tbsp olive oil
- 1/2 tbsp red wine vinegar
- 1/2 tsp dried oregano
- Salt & black pepper, to taste
For the Tzatziki Sauce:
- 1/2 cup Greek yogurt
- 1/2 small cucumber, grated and drained
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1/2 tsp dried dill
- Salt & black pepper, to taste
Instructions
Step by Step:
1️⃣ Marinate & Grill the Chicken:
- Mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
- Coat the chicken and marinate for 20 minutes.
- Grill over medium heat for 6-7 minutes per side until cooked through.
2️⃣ Roast the Potatoes:
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, oregano, garlic powder, salt, and pepper.
- Roast for 25-30 minutes until crispy.
3️⃣ Prepare the Greek Salad:
- In a bowl, mix cucumber, tomatoes, red onion, olives, and feta.
- Drizzle with olive oil, vinegar, oregano, salt, and pepper. Toss well.
4️⃣ Make the Tzatziki Sauce:
- Combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well.
5️⃣ Assemble & Serve:
- Plate grilled chicken, roasted potatoes, and Greek salad.
- Add a dollop of tzatziki sauce and enjoy!
