Greek Night: Grilled Chicken, Roasted Potatoes & Fresh Salad

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Roasted Potatoes:

  • 2 cups baby potatoes, halved
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt & black pepper, to taste

For the Greek Salad:

  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/4 red onion, finely chopped
  • 1/3 cup kalamata olives, halved
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1/2 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Salt & black pepper, to taste

For the Tzatziki Sauce:

  • 1/2 cup Greek yogurt
  • 1/2 small cucumber, grated and drained
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1/2 tsp dried dill
  • Salt & black pepper, to taste

Instructions

Step by Step:

1️⃣ Marinate & Grill the Chicken:

  • Mix olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
  • Coat the chicken and marinate for 20 minutes.
  • Grill over medium heat for 6-7 minutes per side until cooked through.

2️⃣ Roast the Potatoes:

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with olive oil, oregano, garlic powder, salt, and pepper.
  • Roast for 25-30 minutes until crispy.

3️⃣ Prepare the Greek Salad:

  • In a bowl, mix cucumber, tomatoes, red onion, olives, and feta.
  • Drizzle with olive oil, vinegar, oregano, salt, and pepper. Toss well.

4️⃣ Make the Tzatziki Sauce:

  • Combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Mix well.

5️⃣ Assemble & Serve:

  • Plate grilled chicken, roasted potatoes, and Greek salad.
  • Add a dollop of tzatziki sauce and enjoy!

Notes

Cooking Note:
For extra juicy chicken, let it rest for 5 minutes after grilling before slicing. This locks in moisture and enhances flavor!
