Description

A one-pan dinner with crispy chicken, tender potatoes, and melted cheese, seasoned with garlic and Parmesan for a flavorful and easy meal.


Ingredients

  • 1.5 lbs boneless chicken breast or thighs, cubed
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup grated Parmesan cheese
  • 1 cup shredded mozzarella or Italian blend
  • 2 tbsp chopped parsley (optional garnish)

Instructions

  1. Toss chicken and potatoes in olive oil, garlic, Italian seasoning, smoked paprika, salt, and pepper.
  2. Sear chicken in a skillet for 4-5 minutes until golden, then remove. Sear potatoes cut-side down until crispy.
  3. Return chicken to the skillet with potatoes. Sprinkle with Parmesan and shredded cheese. Bake at 400°F for 20-25 minutes.
  4. Broil for 2-3 minutes for extra melted cheese.
  5. Garnish with parsley and serve hot.

Notes

  • For crispier potatoes, pre-soak them in water for 15 minutes before cooking.
  • Adjust seasoning to taste.
  • Use any preferred cheese blend for variation.
