Ingredients

- 1.5 lbs boneless chicken breast or thighs, cubed
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup grated Parmesan cheese
- 1 cup shredded mozzarella or Italian blend
- 2 tbsp chopped parsley (optional garnish)
Instructions
- Toss chicken and potatoes in olive oil, garlic, Italian seasoning, smoked paprika, salt, and pepper.
- Sear chicken in a skillet for 4-5 minutes until golden, then remove. Sear potatoes cut-side down until crispy.
- Return chicken to the skillet with potatoes. Sprinkle with Parmesan and shredded cheese. Bake at 400°F for 20-25 minutes.
- Broil for 2-3 minutes for extra melted cheese.
- Garnish with parsley and serve hot.
Notes
- For crispier potatoes, pre-soak them in water for 15 minutes before cooking.
- Adjust seasoning to taste.
- Use any preferred cheese blend for variation.
