4 boneless, skinless chicken thighs
2 cups baby potatoes, halved
1 zucchini, sliced
1 cup cherry tomatoes
1/2 cup mushrooms, sliced
1/2 red bell pepper, chopped
3 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried rosemary
1/2 tsp dried thyme
1 tbsp lemon juice
Fresh parsley (for garnish)
Instructions
Step by Step:
Set the oven to 400°F (200°C). Lightly grease a baking tray.
In a bowl, coat the chicken with 1 tbsp olive oil, garlic powder, oregano, paprika, salt, and black pepper.
Toss the potatoes, zucchini, tomatoes, mushrooms, and bell pepper with the remaining olive oil, rosemary, thyme, and lemon juice.
Arrange the chicken and vegetables on the tray. Bake for 30-35 minutes, flipping the chicken halfway, until golden and fully cooked.
Sprinkle fresh parsley on top and serve hot!
