  • 2 boneless, skinless chicken breasts
  • 2 tbsp butter (or olive oil)
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano

For the Roasted Vegetables:

  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Italian seasoning

Instructions

Step by Step:

1️⃣ Prepare the Chicken:

  • Season the chicken breasts with salt, pepper, paprika, and oregano.
  • Heat butter in a pan over medium heat.
  • Add garlic and cook for 30 seconds until fragrant.
  • Add the chicken and cook for 5-7 minutes per side until golden brown and fully cooked.

2️⃣ Roast the Vegetables:

  • Preheat oven to 200°C (400°F).
  • Toss the vegetables with olive oil, salt, pepper, and Italian seasoning.
  • Spread them on a baking sheet and roast for 15-20 minutes until tender and slightly crispy.

3️⃣ Serve & Enjoy:

  • Plate the garlic butter chicken with the roasted vegetables on the side.
