Description

Fudgy and chewy brookie cookies combine the best of brownies and cookies into one delicious treat.


Ingredients

Scale
  • 1/2 cup (115g) unsalted butter
  • 1 1/4 cups (225g) semi-sweet chocolate chips
  • 3/4 cup (150g) light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Flaky sea salt for topping (optional)

Instructions

  1. Melt butter and chocolate chips together until smooth. Let cool slightly.
  2. Add both sugars, then mix in eggs and vanilla until glossy and thick.
  3. In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Gently mix into wet ingredients.
  4. Scoop dough balls onto a tray and chill for 30 minutes.
  5. Bake at 350°F (175°C) for 10–12 minutes until crackly on top. Sprinkle with sea salt while hot.

  • Chilling the dough helps achieve thick, chewy cookies.
  • Don’t overmix the batter to keep them fudgy.
