 For the Fried Egg:

  • 1 large egg
  • 1 tsp olive oil or butter
  • ¼ tsp salt
  • ¼ tsp black pepper

 For the Veggie Mix:

  • ½ cup carrots, diced
  • ¼ cup green peas
  • ¼ cup zucchini, diced
  • ¼ cup bell peppers, diced
  • ¼ cup spinach or arugula
  • ¼ avocado, diced
  • 2 tbsp cheese cubes (cheddar or feta)
  • 1 tbsp fresh parsley, chopped
  • ½ tbsp olive oil
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

Step by Step:

1️⃣ Sauté the Veggies:

  • Heat olive oil in a pan over medium heat.
  • Add carrots and peas, cooking for 3 minutes.
  • Stir in zucchini, bell peppers, garlic powder, salt, and black pepper.
  • Cook for another 3–5 minutes until veggies are tender.

2️⃣ Fry the Egg:

  • Heat olive oil or butter in a separate pan over medium heat.
  • Crack the egg into the pan and cook until the whites are set but the yolk is still runny (or to your preference).
  • Sprinkle with salt and black pepper.

3️⃣ Assemble the Bowl:

  • In a bowl, add the sautéed veggies.
  • Top with fresh spinach, diced avocado, and cheese cubes.
  • Place the fried egg on top and garnish with fresh parsley.

4️⃣ Serve & Enjoy:

  • Mix everything together for a delicious bite in every spoonful!
