- ½ tbsp olive oil
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
Step by Step:
1️⃣ Sauté the Veggies:
- Heat olive oil in a pan over medium heat.
- Add carrots and peas, cooking for 3 minutes.
- Stir in zucchini, bell peppers, garlic powder, salt, and black pepper.
- Cook for another 3–5 minutes until veggies are tender.
2️⃣ Fry the Egg:
- Heat olive oil or butter in a separate pan over medium heat.
- Crack the egg into the pan and cook until the whites are set but the yolk is still runny (or to your preference).
- Sprinkle with salt and black pepper.
3️⃣ Assemble the Bowl:
- In a bowl, add the sautéed veggies.
- Top with fresh spinach, diced avocado, and cheese cubes.
- Place the fried egg on top and garnish with fresh parsley.
4️⃣ Serve & Enjoy:
- Mix everything together for a delicious bite in every spoonful!
