Easy Grilled Chicken with Veggie Slaw

🔹 For the Grilled Chicken:

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp chili flakes (optional)

🔹 For the Beet & Carrot Slaw:

  • ½ cup shredded beets
  • ½ cup shredded carrots
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & black pepper to taste

🔹 For the Green Beans:

  • ½ cup fresh green beans, trimmed
  • ½ tsp olive oil
  • ½ tsp salt
  • 1 tbsp chopped parsley (for garnish)

Instructions

Step by Step:

1️⃣ Grill the Chicken:

  • Rub the chicken breast with olive oil, garlic powder, paprika, salt, and black pepper.
  • Heat a grill pan over medium-high heat.
  • Cook for 5-6 minutes per side until golden brown and cooked through.
  • Let it rest for a few minutes, then slice.

2️⃣ Prepare the Beet & Carrot Slaw:

  • In a bowl, mix shredded beets and carrots.
  • Toss with lemon juice, olive oil, salt, and black pepper.
  • Set aside to let the flavors blend.

3️⃣ Cook the Green Beans:

  • Boil or steam green beans for 3-4 minutes until tender but crisp.
  • Drain and toss with olive oil and salt.

4️⃣ Assemble & Serve:

  • Arrange the grilled chicken, beet & carrot slaw, and green beans on a plate.
  • Garnish with fresh parsley and enjoy!

Notes

Cooking Note:
For extra flavor, add a touch of honey or balsamic vinegar to the slaw. Want a creamy dressing? Mix Greek yogurt with lemon juice for a tangy twist!
