- ½ cup shredded carrots

- Salt & black pepper to taste

- ½ cup fresh green beans, trimmed
- ½ tsp olive oil
- ½ tsp salt
- 1 tbsp chopped parsley (for garnish)

Step by Step:
1️⃣ Grill the Chicken:
- Rub the chicken breast with olive oil, garlic powder, paprika, salt, and black pepper.
- Heat a grill pan over medium-high heat.
- Cook for 5-6 minutes per side until golden brown and cooked through.
- Let it rest for a few minutes, then slice.
2️⃣ Prepare the Beet & Carrot Slaw:
- In a bowl, mix shredded beets and carrots.
- Toss with lemon juice, olive oil, salt, and black pepper.
- Set aside to let the flavors blend.
3️⃣ Cook the Green Beans:
- Boil or steam green beans for 3-4 minutes until tender but crisp.
- Drain and toss with olive oil and salt.
4️⃣ Assemble & Serve:
- Arrange the grilled chicken, beet & carrot slaw, and green beans on a plate.
- Garnish with fresh parsley and enjoy!
