Description

A simple and hearty crockpot meal featuring lil smokies, potatoes, and green beans in a savory barbecue sauce.


Ingredients

  • 2 (14-ounce) packages lil smokies
  • 1 1/2 pounds baby potatoes, halved
  • 1 pound green beans, trimmed and cut into 2-inch pieces
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Spray the crockpot lightly with nonstick cooking spray.
  2. Add the halved baby potatoes to the bottom of the slow cooker.
  3. Add the lil smokies and green beans on top of the potatoes.
  4. In a small bowl, mix together the barbecue sauce, brown sugar, melted butter, minced garlic, onion powder, smoked paprika, black pepper, and salt.
  5. Pour the sauce evenly over the lil smokies, potatoes, and green beans.
  6. Gently toss everything to coat.
  7. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours, until the potatoes are fork-tender.
  8. Stir gently before serving and spoon extra sauce over the top.

Notes

  • For a spicier version, add a dash of hot sauce or red pepper flakes.
  • Leftovers can be stored in an airtight container for up to 3 days.
